Glasgow born Edward is a familiar face to nearly all Rules’ regular customers as they enter the front door. Managing a staff of 35 waiting and bar staff he is responsible for the service and smooth running of all aspects of the restaurant 7 days a week, 360 days a year. It was recently calculated that given his ten years with Rules, he must have served over a million customers!

It is one of the most demanding jobs at Rules, necessitating an externally unflappable countenance, with on the spot decision making to ensure that the high standards and expectations are met. Recognising customers and anticipating their likes and dislikes have become natural instincts to Edward who initially followed Law at Glasgow University before deciding that the world of catering was his forte. In the mid 1980’s Edward worked at the well known Charlie Parkers restaurant in Glasgow and met Rules’ Managing Director, Ricky McMenemy, when they worked together at Le Provencale. Subsequent experience was gained working for Allied Domecq at Regano’s before heading south to re-join Ricky.

Edward holidays in far away places such as Vietnam (he gets bored on a beach) and reads books on palaeontology.
